Black Bean and Corn Salsa

This black bean and corn salsa is a great way to switch up your boring old salsa routine! Black beans, corn and spicy tomatoes with chilies make this salsa fresh and irresistible!

Do you have a signature dish that people ask you to bring to every party or cookout? For me, it’s this black bean and corn salsa. I always make sure to bring a double batch wherever I go in the summer because it gets devoured. It is one of those dishes that you find yourself nibbling on, even though you’re stuffed.

Aside from the fact that this salsa is enjoyable as a salsa with chips, it is also enjoyable on tacos, or inside a burrito, or in a burrito bowl. The options are endless with this stuff! The corn makes the salsa slightly crunchy and adds a soft sweet element. The black beans make it hearty and filling. The tomatoes with chilies add a great freshness and spice and the red wine vinegar adds a nice zip and sour element. Everything works so well together in this salsa and each bite tastes a little different than the last!

How to make Black Bean and Corn Salsa

The tomatoes and green chilies: To make this salsa as easy as possible, it calls for a can of Rotel tomatoes with green chilies. You can always sub fresh tomatoes and a can of green chilies if you have some extra tomatoes on hand. I always add a can of Rotel and an extra can of green chilies because we like it a little on the spicy side.

The corn: Again, to make this as easy as possible, I use a can of whole kernel corn. If you have extra grilled corn, or corn on the cob, you can always cut it off the cob and use that.

The black beans: There is a trend here called “as easy as possible” with this salsa, so I use drained cans of black beans. If you cook dry beans and have extra, you can always use those, too!

Refrigeration: This salsa tastes best when it sits in the refrigerator for a while. I usually make it the day or night before I want to take it to a party. All the flavors get a chance to mingle together and it makes the salsa taste awesome!

Extra add in’s: There are so many possibilities with this salsa as far as add in’s. A few ideas include: a jalapeño, a red onion and a green or red pepper.

Ingredients
  • 1 (10 ounce) can Rotel tomatoes with green chilies
  • 1 (4.5 ounce) can chopped green chilies
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 2 (15 ounce) cans black beans, rinsed and drained
  • ¼ cup green onion chopped
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons red wine vinegar
  • ¼ cup chopped cilantro optional
Instructions
  1. Mix everything together in a medium sized bowl.
  2. Refrigerate over night.

  3. Serve with Fritos scoops or Tostitos scoops.
