This southwest bake is the epitome of a “breakfast for dinner” food. It has layers of tortillas sprinkled with flavorful Italian sausage. It is slightly spicy from the green chilis and oh so cheesy from the Colby jack cheese. Top all of that off with fluffy eggs and you have yourself a delicious, filling meal.

What I love most about this recipe is that you can eat it a lot of different ways. You can eat it with mashed potatoes and veggies. You can eat in in a wrap with lettuce and tomato. The possibilities are endless with this incredibly tender meat.
Instead of making actual burritos, all the components of a meat, bean and cheese burrito are stacked up with salsa and spices and baked to perfection. I love this meal because it takes hardly any effort and it is very customizable to what your family likes.
Aside from the 15 different beans in this recipe, it also has peppers, onions, tomatoes, and a little bite to it with green chilis and ancho chili powder.
This soup has so many big chunks of mushrooms, carrots, onions and plenty of wild rice! As an added bonus, wild rice is high in protein and gluten free!
This recipe for minestrone is a little different in that it has an addition of cabbage in it. It just enhances the flavor of this soup.
On top of all that chicken, you get flavorful onion and green peppers, plus chunks of pineapple. This recipe could not be any easier!
