I am in love with the cold veggie pizza that always shows up at parties. That is the first thing I look for at the food table. I don’t know if it’s because I am a huge veggie lover and that is why I gravitate toward it first at parties, or if I just love pizza. Either way, that is one of my favorite things to eat at parties, and I definitely eat my fair share. No shame.
I have to admit, I’m not usually the one who makes the cold veggie pizza and brings it to the party. I feel kind of guilty sometimes because I always hope someone else brings it, and if no one does, I feel disappointed. I am all about making the easiest thing possible and bringing it to the party.
I have found a solution to my cold veggie pizza dilemma: don’t make it! What I mean is, don’t make it into a pizza, make it into a dip! I don’t know why I didn’t think of this sooner, because it requires minimal steps to a fantastic dip that tastes just like the pizza.
There are so many short cuts I used to make this dip and I am not ashamed at all! Already chopped veggies, a packet of ranch and even already sliced bread. No waiting for the crust to bake and cool for the pizza, which is especially nice in the middle of summer! This dip comes together in 15 minutes, flat! We are obsessed, and I bet you will become obsessed too!
How to make this dip
Cream cheese: The cream cheese needs to be very soft so that the sour cream and seasonings blend well in it. You can use regular or reduced fat. Either works great.
Veggies: You can use whatever kind of veggies you like. I chose carrots, broccoli, cauliflower and onion because those are our favorites. Other great ideas are peppers, celery and olives.
Serving: This dip tastes best after its been refrigerated for a few house. We like to eat ours with sourdough bread. Other great options are pita crackers, other bread varieties and wheat thins.
