Fall is finally upon us! I am so glad it’s here because that only means one thing: our baby girl will be here any day! We cannot wait until she gets here. One of my favorite easy things to make when time is of the essence is this instant pot vegetable soup with quinoa. How can you go wrong with a bunch of veggies and quinoa? You can’t.

This soup has become one of our favorites to have when we really have nothing else in the house, or it’s chilly outside and we are in a soup mood. I know I’ve told you before, but my husband is not really a soup fan. You know this soup is good when he asks me to make it.

One of the things I love about this soup is you can put whatever veggies you like into it or whatever veggies you have on hand. Sometimes I find a bag of frozen mixed veggies in the freezer and throw it in or have some leftover veggies from a tray we had at a football party.  Nothing is off limits here! You can also use what is in season at the time. The possibilities are endless!

How to make this instant pot soup

 

Veggies: Like I said above, you can use whatever kind of veggies you and your family like. We like to mix it up and add whatever we are feeling that day. You can add as many varieties of veggies as you want.

Quinoa or Pasta: We love the way the quinoa makes this soup taste. It makes it hearty and healthy. You can also substitute pasta to make veggie noodle soup. We have done this too and it’s still so delicious and filling. I would suggest using a small type of pasta, like ditalini or small macaroni.

Broth and water: I like to use a combination of broth and water for the base. I like the seasonings to shine through and I find that if I use all broth, they end to get lost. The seasonings help to season the water and make it yummy. You could use all water if you don’t have broth. You would just need to double the seasonings and taste at the end and add more if necessary.

Ingredients

  • 4 carrots peeled and sliced, not too thin
  • 4 celery stalks washed and sliced not too thin
  • 1 small onion, diced
  • 2 cups broccoli florets, washed and any big pieces cut into smaller pieces
  • 1 can corn, drained
  • ½ cup quinoa, rinsed, OR ½ cup small pasta
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon dried parsley
  • 1 tablespoon onion powder
  • 2 tablespoons minced garlic, I use jarred
  • 1 teaspoon celery salt
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 4 cups vegetable broth
  • 3 cups water

Instructions

  1. Place all the veggies, quinoa or pasta, and seasonings into the instant pot.
  2. Top with the vegetable broth and water and stir.
  3. Close the lid and make sure the valve is in the sealing position.
  4. Press the manual button and the plus or minus button until you reach 6 minutes.
  5. Once the instant pot is finished, quick release the valve.
  6. If the soup looks too thick, add more vegetable broth or water until its your desired consistency.
