Even without meat, these enchiladas are very filling and down right delicious! They have tender veggies, spicy tomatoes and green chilis, lots of black beans and brown rice and cheese! Lots of cheese!
This is a great way to make a whole chicken in half the time it would normally take. I love the thought of buying a whole chicken. You can feed a family of 4-6 people for less than it would cost if you bought 6 chicken breasts.
Southwest chicken and barley soup really does have it all. It has tender chicken, which cooks in the flavorful broth and veggies and then is shredded at the end. It’s a bit spicy with the Rotel tomatoes, southwest corn and spices. But the star of the show is really the barley.
This beer cheese and summer sausage dip has so many levels of flavor. The creaminess from the cream cheese and sour cream, the ranch packet, Dijon mustard and garlic powder,the green onions, cheddar cheese and summer sausage add great texture. Lastly….the beer.
I was feeling a little ambitious and wanted to do something I’ve never done before and make this berry banana bread. I bought a ton of bananas, and also 3 bags of frozen fruit. It was a no brainer that I needed to try a new recipe with my abundance of brown bananas and frozen fruit.
