Ranch Pimiento Cheese Dip
This ranch pimiento cheese dip is the perfect game day dip! It’s packed full of chopped pimientos, cheese and ranch flavor. It goes great with crackers or pretzels!
RANCH PIMIENTO CHEESE DIP
Hi Friends! Happy Friday! It’s been a long week. I am so ready for the weekend for various reasons, one of them is being able to eat this ranch pimiento cheese dip non-stop during all sporting events.
My husband and I will be parked in front of our television for most of the weekend because: sports. We are a sports loving house. I feel like that is literally all we watch. Watch sports and eat dip. Evidence: here, here, and here. And, of course, this pimiento cheese dip.
We have grown to absolutely love this dip! It is simple to make and packs a ton of flavor. The addition of a packet of dry ranch mix amps up the flavor of an already amazing, classic dip. With a few other tweaks of course.
Tips on how to make this dip:
Make sure your cream cheese is super soft. You can leave it out on the counter until it is soft or you can microwave it in 10 second increments until softened, but not hot.
Make sure you get diced pimientos. I have used sliced ones before (you wouldn’t think it would be that big of a deal, but it is). The diced ones will get smaller as you mix them with an electric mixer and that is what you want. The sliced ones don’t get as small, unless you chop them first, but who wants to do an extra step? Not me! Give me dip, fast!
Shredded cheese: honestly, you can use whatever kind of cheese you like. I opt for sharp cheddar because of the flavor it gives the dip, but pepper jack or Colby would taste great too!
Finally, the green onions. If you don’t like onions, you can leave them out. My hubs is a fan of onions so I tend to put a lot in. You could also sub a small red onion.

- 2 (8-ounce) packages cream cheese,, softened
- 1 cup mayo
- 1 (4-ounce) jar diced pimientos
- 1 teaspoon paprika
- 1 (1-ounce) packet dry ranch mix
- 1 teaspoon dry mustard
- 3 green onions,, diced
- 2 cups shredded sharp cheddar cheese, , or your favorite cheese
- With an electric mixer, blend the cream cheese, mayo, diced pimientos, paprika, ranch and dry mustard until well combined.
- Fold in the green onions and shredded cheese.
- Chill for 1 hour.
- Serve with crackers, tortilla chips or crusty bread.
